It's been a while since I rode an 1100K but I used to ride one regularly. I can tell you that they're bl00dy fast and pretty much unburstable. Despite what you may have read. they handle well for their size but the length, rake and trail means that they're no scratcher's bike (you can't easily flick the bike through a set of esses for example). The brakes should be well up to the weight, but the weight means that you won't be outbraking 400's. The best news though is the motor; it has real power from tickover; there are only 5 gears but you could probable manage with 3!
1100K's used to be great for long controlled wheelies and knee down on long fast sweepers.

i got an 1100k engine in my slabby 7-11 and agree with what boyscout said about it - its a monster!! bags of torque and a mental top end too!! And you dont have any water contaminating your engine ;)
Plus if you want to improve the handling or update it at all, its so easy with old suzukis - you could slot an usd front end straight in from a later GSXR, and then bolt 6-pots straight onto that, 5.5" wheels willl slot straight in etc etc etc.

I have to agree with what you said to me once before, oil-cooled Suzuki's Rock! Jim, from a looks point of view, I think your 750 is better (more modern)...But whatever makes you happy mate, I'm sure you'd have fun on the 1100 too.
